I have an empty box with heavy mayonnaise from my last step. What makes mayonnaise so strong and what is it used for?

Thick mayonnaise is commonly used in restaurants instead of regular mayonnaise, where it helps make thicker, richer mayonnaise sauces on cold salads (act and mac) and sandwiches.

The only thing I remember about thick mayonnaise is that it is very thick, almost like couscous (or frosting), while regular mayonnaise is like whipped cream.

I do, but I'm not sure there are more eggs and oils to make a thicker emulsion.

1 cup olive oil, peanut or vegetable oil (or mixture)

1 1/2 tablespoons vinegar or lemon juice

Salt to taste

Bring the eggs to room temperature. In a blender or food processor, place the eggs, yolks, salt, musk, red pepper and 1/4 cup oil. Start the engine and pour the remaining 3/4 cup of oil into a slow, thin stream. Add vinegar or lemon juice. Refrigerate to taste, season and ready to use.

Yield: 1 1/2 cups.
